  • Day 22 of 44 Days of Keto. I found these what I would consider somewhat low carb tortillas by @latortillafactory yesterday at @sprouts I was a little nervous to buy them since I’m trying to stay around 20g of carbs per day but was able to fit them in with no problem today. I made myself a wrap with lettuce, roasted green beans, turkey, avocado, and mayo. It was awesome!

  • Day 18 of 45 days of Keto. This is literally all you need for the best roasted spaghetti ever. Some @kasandrinos olive oil and some @redmondrealsalt .......................................................
Roasted Spaghetti Squash
Ingredients:
✨1 spaghetti squash
✨.5oz olive oil
✨Salt to taste
Directions:
⭐️ Cut spaghetti squash in half and scoop out all of the seeds.
⭐️ drizzle the olive oil on the inside of the squash and use your fingers to rub it in all over the inside of the squash.
⭐️ sprinkle on your salt to taste. In my opinion you can go a little heavier on the salt. Especially if it’s Redmond Real Salt.
⭐️ place the squash halves on a baking sheet cut side down and bake in the oven at 400° for 50 minutes to 1 hour. ⭐️ once the squash shell is tender you know it’s ready. Use a fork to scrape out the “spaghetti strands“ from the inside of the squash and enjoy it with any desired side or sauce.

In my salad today is lettuce, double Carnitas, mild green salsa, cheese, sour cream, guacamole, and a healthy handful of cilantro.   • Day 14 of 45 days of Keto. My Super Bowl snack today consists of homemade guacamole, homemade baked zucchini chips and homemade Buffalo chicken dip. This is a great low carb alternative to eating everything breaded and fried on this national day of football. I followed this up with a tablespoon of all natural peanut butter with 5 chocolate chips. Yum and Yum!

  • Day 13 of 45 days of Keto. Ummmm... I just fasted for 24 hours and this amazing Cobb salad is what I broke my fast with. I was originally intending on only fasting for about 16 hours but as the day went on I continued to feel great and not hungry so I just kept it going. 24 hours after my last meal I decided to eat. Honestly the crazy part about all of this is I think I could’ve kept going. It made it very clear to me today that eating is a very mental game. Anytime I thought about food I could feel that my stomach was empty. When I was distracted I was completely fine. What an awesome unexpected experience and what a delicious salad.  7g carbs, 73g fat, 50g protein, and 1000 calories.

  • Day 13 of 45 days of Keto. I’ve got about 30 min lift on my planned intermittent fast and have gone to the gym to do a Zumba class and did 3 miles on the treadmill. I’m feeling amazing. I always seem to forget how awesome I feel while fasting. I think I may extend it out longer than anticipated today. Let’s see how it goes.

  • Day 12 of 45 days of Keto. I’m not perfect. I’ve been rocking Keto for 12 days and after my workout today I felt like having some extra carbs so I did. I got a meal with 3 chicken strips a biscuit and a water on the side. Definitely not the worse thing I could have had and not the best but this is real life.
