Keto Short Bread Butter Cookies

Alright y’all I have finally made my favorite keto friendly cookie. Believe it or not these cookies are less than 1 gram of carbs each and taste just like a combination of a sugar cookie and a short bread cookie. What makes this bomb diggity cookies even better is when I put a small dollop of an all natural sugar free peanut butter on top and maybe a couple chocolate chips. WOW! SO GOOD! Ok no need for more fluff here is the recipe.

Keto Short Bread Butter Cookies

Serves: 12 Cooking Time: 15-18 min

Ingredients

  • 1 cup almond flour
  • 1/4 cup monk fruit sweetener
  • 3 tbsp butter (softened of room temp)
  • 1/4 tsp vanilla extract

Instructions

Pre heat oven to 350 degrees

Line a cookie sheet with parchment paper

Combine all ingredients in a bowl and mix with an electric mixer until combined

Once combined divide cookie dough into 12 equal parts

Roll each cookie dough piece into balls and place on to cookie sheet

Flatten each ball with a fork

Place in the oven for 15-18 min or until the edges begin to golden

Remove from oven and let cool.

Enjoy as is or top with any delicious low carb spread (example: peanut butter, almond butter, cream cheese)
