To so many people Christmas time is the unofficial Eat-As-Many-Sweets-As-You-Can time of year. I have been very busy doing by best to stay away from the treats but why would I deny you these amazing delights. I know misery enjoys company but seriously, it’s Christmas time.
Anytime I hear of peppermint bark I think of a time when I was a kid and my mother worked at Williams Sonoma. One of her favorite things about working there was the amazing peppermint bark that they sold during the holidays. I’m pretty sure that if you were to ask her what one of her favorite memories of working there was she would mention that infamous peppermint bark.
Chocolate Bark is a really easy and really fun treat to make at home. One thing that has made it even more awesome for me is that I found Enjoy Life Semi-sweet Chocolate Mini Chips This dairy free, soy free and nut free option is the perfect ingredient to use in this Christmas dessert.
This recipe is a perfect one or a party at your house, at a friends house or wow your coworkers with this eye and mouth candy.
In order to make the bark into bars I found this mold on Amazon to pour my melted chocolate in.
It worked perfectly. I only filled the molds about 3/4 of the way and they still came out so thick.
You can definitely find more shallow molds but this worked out very well from me.
I added crushed candy canes to all 9 of the molds and also added white chocolate chips to the other 4 of them.
Chocolate Peppermint BarkPrint Recipe
- 2 bags of Enjoy Life Chocolate Chips
- 3-4 candy canes
- 1/3 cup of white chocolate chips (optional)
Melt the chocolate chips in a double boiler
Mix in about 3/4 of your crushed candy canes
Once completely melted pour into molds or on a flat baking sheet lined with parchment paper
Smooth out the surface to make bark into an as much as an even layer as possible
Top the melted chocolate with the remaining crushed candy canes
Place the bark into the refrigerator or freezer on a level surface
Chill until completely hard and solidified
Serve and Enjoy!
