Chocolate Sweet Potato Pudding
There are so many time that I want something sweet after dinner but really want something totally decadent. Most of the time I can curb my craving with just a pice of dark chocolate but something I want something rich and smooth and cold. Sounds like ice cream right?
Well, I TRY to keep the ice-cream to minimum so I created this Chocolate Sweet Potato Pudding dessert for days that I want that special treat.
This dessert is super decedent and super yummy. Make this pudding and place it in individual serving ramekins to throughly impress your guests this year. They will never believe that there is sweet potato in their dessert.
Chocolate Sweet Potato PuddingPrint Recipe
- 3 sweet potatoes
- 3/4 cup cocoa powder
- 1/2 cup + 1 tbsp agave syrup
- 7 tbsp vanilla almond milk
- 4 tbsp plain yogurt
- 3 pitted dates
Cook sweet potatoes until very tender
Remove the skins
Place pealed sweet potatoes into a med to large bowl
Add cocoa powder, almond milk and dates into a high power blender and blend until well combined (no date chunks)
Pour mixture from blender into the bowl with the sweet potatoes and add the agave and the plain yogurt.
Mix well with a hand mixer for about 5 minutes or until pudding is well combined and airy
Spoon pudding into 4 individual serving ramekins and place in refrigerator until cold
Once cooled top the pudding with your desired topping or eat it as is.
