Tis the season for wanting less stress especially in the kitchen. This Blender Cauliflower Sweet Potato Mash with be a super fast side dish for your Thanksgiving feast.
Well the season is upon us where we all head to the internet for new recipes to incorporate into our holiday feasts. Growing up, mashed potatoes was always one of my favorite side dishes. There is just something amazing about a pile of super soft, super fluffy, super buttery mashed potatoes.
After making the shift to a paleo lifestyle I started dropping the russet potatoes for the amazing sweet potato. I never really enjoyed anything sweet potato-ey as a child mostly because during the holidays there were yams prepared with those warm fall spices like cinnamon and nutmeg that I really dislike.
Now I am always looking for ways to get super healthy ingredients into my diet and combining cauliflower with sweet potatoes is an amazing way to do it.
I wanted to create a simple and super healthy way to get some veggies into your carb load.
Cauliflower is one of those veggies that is easy to cook with and easy to make disappear in various recipes for those of you with picky eaters at home.
This blender recipe is so easy you will want to keep it in your back pocket all year long. I used a Ninja Blender to blend this recipe. Needless to say it worked beautifully. This is one of the best investments I have ever made in the kitchen. If you don’t have one, get one!
Blender Cauliflower Sweet Potato MashPrint Recipe
- 3 large sweet potatoes
- 2 cups cauliflower chopped into small florets
- 1/4 cup heavy cream
- 4 tbsp butter
Microwave cook sweet potatoes until soft and tender
Once cooked and slightly cooled cut potatoes in half and remove skin
While the potatoes are cooking boil 2 cups for cauliflower until soft and tender
Once the cauliflower is cooked drain water.
Place the cooked and peeled sweet potatoes and the cooked and drained cauliflower into a high powered blender
Pour in warmed heavy cream. (Slightly heat in the microwave so when nits combined with the potatoes and cauliflower it doesn't cool it off too much)
Add butter to blender
Once all ingredients are in the blender, blend on a medium to high setting. Make sure to scrape down the sides of the blender and blend again until all is combined.
be careful to not over blend and turn your mash into a smoothie.
Once combined, serve with additional pat of butter on top.
I didn't add any salt to this recipe. I wanted to keep it sweet.
